The 31-year-old Melbourne man was arrested by Port Stephens police about 10am.
The man was on board a twin-engine aircraft that had been chartered to fly from Melbourne to Noumea via Newcastle.
When the plane arrived at the Williamtown airport for refuelling, Australian Border Force officers stopped the man and searched his baggage.
Inside bags and suitcases, ABF officers allegedly found more than $60,000 in undeclared Australian currency.
He was arrested and taken to Raymond Terrace Police Station and charged with attempting to move physical currency out of Australia and dealing in the proceeds of crime.
He was listed to appear before a magistrate at East Maitland Courthouse on Wednesday morning.
