Centred around the Karuah RSL Club, the day will feature the popular produce and cooking competition, a thong throwing contest mixed with a range of fun activities for the whole family.
Karuah RSL Club secretary manager Ross Parr said the organising committee was hoping to improve on the 1000 people who enjoyed last year's celebrations.
"The produce competition has five categories - baking, bottling, flower arrangements, fruit and veges and best decorated," he said.
"The entries include cakes, lamingtons, biscuits, pickles and jams, flowers of all shapes and sizes, homegrown produce and decorations.
"After the competition the items and auctioned and all money raised goes to the Karuah, Limeburners Creek and North Arm Cove fire brigades.
"In 2014 we raised over $6000."
The entertainment will be provided by musician Johnny Noble between 4pm and 8pm. The day will end with a dazzling fireworks display at 9pm.
"We have the only fireworks in the entire Port Stephens region," Mr Parr said.
"They are a great way to finish the celebrations."
