Port Stephens will soon have its very own cookbook, featuring the region's abundance of fresh seafood and some of its most prominent chefs.

The cookbook, titled 'Port to Plate', is the brainchild of Nelson Bay's Lynda Sloan, who while working at a local seafood shop during the COVID lockdown, recognised the need for a quality seafood recipe book in Port Stephens.
"We have been working extremely hard over the past six months organising and cooking recipes from local chefs, and we all very excited about the progress made," Ms Sloan said. "We are aiming to have the publication available by September, if not earlier."
Ms Sloan said that the dedicated team had just completed the cooking stage of the project.
"For the month of May we have focused on the recipes. Stephen Keating and Kevin Rowley have been working on the filming and photography of the dishes with the chefs in their kitchens, who have cooking their new creations with plenty of education along the way," she said.
"Sergey Bobylev from Lime Mexican has created some wonderfully elegant, simple recipes for the home cooks and Ludovic Poyer, from Poyers, has shared some of his inspirational, creative and thought provoking dishes, while executive chef Michael Jenkins, of the Anchorage, has added some of his favourite recipes."
For the community recipes, Susan Zhou and Lynda have been sharing the load, cooking and creating new recipes to cover some of the more obscure fish species.
In addition to showcasing the everything local, fresh and sustainable within Port Stephen's waterways, the cookbook will educate the reader about the various species, the best seasons, where the fish reside and when they spawn.
"The schedule for June and July will cover finalising design and construction of the website, and we hope to have the publication print-ready by August. The project continues to be well supported by the community and businesses."
Ms Sloan said that QR codes would be placed throughout the cookbook, giving live footage for the readers to view the entire process from the catch to the plate.
The book will be made available to the public through local stores, the Port Stephens Information Centre and online in September.
